Fish Tacos

"This recipe is easy, healthy and delicious plus it only takes about 15 minutes start to finish," says Rich Hohnstein of Grand Island.

Fish Tacos
Preparation time: 5 minutes
Cooking time: 10 minutes

1 quart water

1 tablespoon Greek seasoning

3/4 pound crappie or white bass filets (other white fish can be substituted)

Taco shells, hard or soft

1 cup shredded sharp Cheddar cheese

Ranch dressing

10-ounce can Rotel tomatoes

Add Greek seasoning to water in saucepan and bring to boil; add fish and boil about 5 minute or until fish flakes.

Drain water from fish and break apart with fork,

Fill up taco shells with fish, tomatoes, cheese and ranch dressing.

Makes 2 servings.
