"This is a fast, hot and nutritious dish for cool winter evenings," says Marge Langan of Doniphan. 'Quick and Nutritious' Soup 1 pound ground beef 1 small onion, diced 10-ounce package frozen mixed vegetables 41-ounce can V-8 juice 3/4 cup instant rice Salt and pepper, to taste In a skillet, brown ground beef and onion. Meanwhile, combine frozen vegetables with juice in large stockpot. Drain beef and add to vegetable/juice mixture. Simmer 5 to 10 minutes; add rice and simmer another 10 minutes.
