Chicken Fajita Pizzas

Bring the taste of your favorite chicken fajita to a pizza.

Chicken Fajita Pizzas

Total time: Less than 30 minutes

1 tablespoon light olive oil
3 cups assorted bell peppers (such as green, yellow, and red), cut into thin strips
1 large red onion, cut into thin wedges
1  10-ounce can natural white chicken, drained and shredded
1/3 cup water
1   1.35-ounce package fajita seasoning mix
1/2 cup salsa
8   6-inch whole wheat tortillas
4 cups finely shredded reduced-fat Mexican blend cheese, divided
Mexican toppings such as reduced-fat sour cream, salsa, and fresh chopped cilantro

Heat oven to 400 degrees F. In skillet, saute bell pepper strips and onion wedges in oil until crisp-tender. Add chicken, 1/3 cup water and fajita seasoning mix. Cook, stirring occasionnally, over low heat 3 to 5 minutes. Stir salsa into chicken mixture.

Place tortillas on baking sheets. Top each tortilla with chicken mixture and 1/2 cup shredded cheese. Bake 10 to 15 minutes or until tortillas are crisp and cheese is melted. If desired, top with Mexican toppings.

Makes 8 servings.
