Frequest Simply Cookin’ contributor Maurice Paulk of Wood River shares this easy skillet dinner. It would be great to feed holiday guests and take a break from leftover turkey.
Cheesy Skillet Dinner
1 pound ground beef
1 small onion, chopped
1 4-ounce can sliced mushrooms, drained (optional)
1 16-ounce jar salsa
1 4-ounce can diced green chilies
2 cups four-cheese Mexican cheese blend or shredded mild cheddar cheese, divided
1 cup crumbled tortilla chips
Cook beef, onion and mushrooms in large skillet until beef is browned; drain. Stir in salsa and chiles; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 2 to 3 minutes.
Sprinkle with cheese and tortilla chips.
Cover; cook for an additional 2 to 3 minutes or until cheese melts.
Makes 6 servings.
