Fiesta Chicken Pasta |
"This is a quick and easy pasta meal that the whole family will love!" says Rachel Rathman of Grand Island. Fiesta Chicken Pasta 8 ounces rotini pasta, cooked 1 Tablespoon oil 1 pound boneless skinless chicken breasts, cut into bite-sized pieces 2 cups chopped green or red bell peppers 1/4 cup Italian salad dressing 1 tablespoon chili powder 1/2 cup salsa 1/2 cup sour cream 1/2 cup shredded cheddar cheese Heat oil in a large skillet on medium high heat. Add chicken. Cook and stir 6 minutes. Add peppers, dressing and chili powder; cook 3 minutes or until chicken is cooked through, stirring frequently. Stir in salsa and sour cream.
