Frequent Simply Cookin’ contributor Maurice Paulk of Wood River shares this recipe that is just right for chilly fall days.
“One-Skillet Chili is great when served with crackers or fresh hot buttered corn bread,” Paulk says.
One-Skillet Chili
Preparation and cooking time: 20 minutes
1 pound ground beef
1 medium onion
1 can beans (red, kidney, pinto or Great Northern)
1 can tomato paste
Water
1 can diced tomatoes (optional)
1 can tomato sauce (optional)
Chili powder, to taste
Salt and pepper, to tasteBrown ground beef and drain excess fat. Dice the onion in small pieces. Drain beans and rinse. Add tomato paste, fill paste can with water and add water and diced tomatoes and/or tomato sauce, if desired. Add all remaining ingredients to skillet & simmer until the onions are translucent.
Makes 5 servings.
