Ham and Rice Casserole

"This is a great recipe reheated," Jane Obermeier of Doniphan said "Always make extra for leftovers."

Ham and Rice Casserole
(ready in less than 30 minutes)

1/4 cup plus 1 teaspoon margarine

1/2 cup chopped green pepper

1 cup chopped broccoli

1 1/2 cup milk

1/4 cup flour

1/3 cup mayonnaise

2 cups cooked rice

1/2 teaspoon salt

1/4 cup grated Parmesan cheese

2 cups fully cooked ham

1/2 teaspoons salt

In a large skillet, melt 1 teaspoon margarine; saut green peppers and broccoli until tender. Set aside in bowl.

Next add 1/4 cup margarine in skillet. Stir in flour until blended, gradually add the milk, using a whisk, mix together until thickened. Reduce heat to low and stir for 1 minute. Stir in the mayonnaise and Parmesan cheese until blended. Stir in remaining ingredients.

Makes 4 servings.
