Speedy Salmon Fillets

1 1/2 pounds boneless, skinless fish, cut 1 inch thick (salmon, tuna, or halibut work well)

3 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried basil

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1/4 teaspoon pepper

Rinse fish and pat dry with paper towels. Combine lemon juice, garlic, basil, olive oil, soy sauce, Worcestershire sauce and pepper. Brush sauce over fish.

Grill fish over medium high heat for 4 to 6 minutes per 1/2 inch of thickness, turning halfway through grilling and brushing occasionally with remaining sauce.
