Broccoli and Rice Casserole/Rice Timbales

Rice is the star ingredient of these two recipes submitted by Dolores Florian of Ord and Renee Bornemeier of Chapman.

Broccoli and Rice Casserole

1 package frozen broccoli or tops of fresh broccoli
1 cup instant rice, uncooked
1 10 3/4-ounce can cream of mushroom soup
1/2 cup milk
2 1/2 cups shredded cheese
1/2 teaspoon garlic salt

Preheat oven to 350 degrees F. Combine all ingredient in large casserole dish. Bake about 30 minutes or until rice is tender.

Rice Timbales

2 eggs
1 cup cooked rice
1 cup tuna, drained
6 sliced stuffed olives
1/4 teaspoon paprika

Beat whites of eggs and fold into rice. Add other ingredients and put into muffin tins. Bake at 350 degrees F for 25 minutes. Serve with a favorite cream sauce such as cream of mushroom, chicken or celery.

Makes 6 servings.
