Hot Dog Boats

1 package of jumbo hot dogs

Warm mashed potatoes (freshly mashed or leftovers)

Bacon bits or chives

Sliced cheese

Cut the hot dogs vertically down the middle without cutting all the way thru. Open the hotdog and spoon in a large helping of the mashed potatoes. Cover with bacon bits or chives and a slice of your favorite cheese (optional).

Place in oven and bake for about 5 to 10 minutes or until everything is really hot. Serve with a vegetable and apple sauce. That's it!

Note: "Hot Dog Boats are a favorite meal at our house especially with our son and all of his friends who eat with us. It's really very simple and fun and the kids can help make them if they want. It's a big hit with my family and the fact that the kids can help make them gives us quality, fun time together in the kitchen.
