Buttermilk Fried Chicken

"This recipe takes about 30 minutes from start to finish. It tastes just like fried chicken - without the time commitment. Serve with mashed new potatoes and fresh veggies for a complete meal," says Rachel Rathman of Grand Island.

Buttermilk Fried Chicken

2 boneless, skinless chicken breasts, cut into 2 inch chunks

1/2 cup buttermilk

1/4 cup cornmeal

1/4 cup flour

1 teaspoon pepper

1/2 teaspoon salt

1/4 cup oil

Mix cornmeal, flour, salt, and pepper. aDredge chicken in buttermilk, then in cornmeal mixture to coat. Heat oil in a large skillet. Fry chicken in oil, turning once, until cooked through (about 8 minutes total).
