Roast Beef with Penne Pasta |
This tasty dish featuring deli roast beef combined with penne pasta, fresh peppers, onion and garlic, can be served warm or cold. Roast Beef with Penne Pasta 1 pound deli roast beef, thinly sliced 12 ounces uncooked penne pasta 2 tablespoons olive oil 1 small garlic clove, minced 1 each yellow, green and red pepper, cored, seeded and thinly sliced 1 small red onion, chopped 1 cup black olives 1 teaspoon crushed red pepper 1/2 cup citrus salad dressing or to taste Cook pasta according to package directions. Cut roast beef into strips. Saute garlic, peppers and onions in olive oil until tender. Combine roast beef strips with all ingredients and toss. Serve warm or cold. Makes 6 servings.
