Easy Enchiladas

“I like this recipe because it use ingredients that I usually have in my kitchen,” Seaman says.

Easy Enchilladas
Preparation and cooking time: 20 minutes

1 pound ground beef
1 package taco seasoning mix
6 small flour tortillas
1/2 cup sour cream
1 16-ounce jar picante sauce
1/4 cup shredded Cheddar cheese

Brown the ground beef and drain Add the taco seasoning and cook according to package directions.

Spread 3 tablespoons of the taco meet down the center of each tortilla and top with 1 tablespoon sour cream.

Roll up and place seam side down in glass 9-inch square bakcing dish. Top with picante sauce and Chedder cheese.

Cover with clear plastic wrap. Microwave on HIGH for 3 to 5 minutes to warm shells and melt cheese.

Makes 6 servings.
