Tangy Oriental Pasta Chicken Salad
Preparation time: Less than 30 minutes

1   13 1/4 ounce box whole wheat rotini pasta, prepared per package directions
1   10-ounce can natural white chicken chunks, drained
1   10-ounce can mandarin oranges, drained
1 cup seedless grapes, halved
1 small cucumber, peeled, seeded and chopped
6 green onions, sliced
Orange Vinaigrette Dressing:
3/4 cup orange juice concentrate, undiluted
1/4 cup premium extra virgin olive oil
1/4 cup white vinegar

In large bowl, combine cooked pasta, chicken chunks, mandarin oranges, grapes, cucumber and onions. In separate bowl, whisk together orange juice concentrate, olive oil and white vinegar. Pour prepared vinaigrette over salad and toss to coat. Serve immediately.

Makes 6 servings.
