Greek Chicken Pizzas
Preparation and cooking time: 30 minutes
2 8-inch whole wheat tortillas or whole wheat pitas
2 tablespoons prepared hummus (any variety)
1 5-ounce can natural white chicken, drained and shredded
1/4 cup pitted kalamata olives, halved
1/4 cup chopped roasted red peppers
2 tablespoons thinly sliced red onion
1/4 cup crumbled reduced-fat Feta cheese
Heat oven to 400 degrees F. Place tortillas on a lightly greased baking sheet. Top each with hummus, chicken, olives, peppers, red onion and Feta cheese.
Bake 8 to 10 minutes or until tortilla is crisp and toppings are hot.
Makes 2 servings.
