Turkey Pastrami Sandwiches on Irish Soda Bread

A loaf of bread from the bakery; a bottle of salad dressing, deli cole slaw and turkey pastrami are all you need for these tasty sandwiches.

Turkey Pastrami Sandwiches on Irish Soda Bread

1   8-inch loaf Irish soda bread
1   8-ounce bottle Thousand Island dressing
4  cups prepared deli coleslaw, divided
12 ounces turkey pastrami, thinly sliced

Cut Irish soda bread in half lengthwise. On each half of bread, spread 1⁄3 cup dressing. Layer bottom of loaf with 1⁄3 of cole slaw and 1⁄2 of the pastrami. Repeat layering with 1⁄3 cole slaw, 1⁄3 cup dressing, remaining pastrami and remaining 1⁄3 cole slaw. Cover with top half of loaf. Wrap sandwich tightly in plastic wrap.

Refrigerate until serving time.

To serve, cut sandwich into 4 wedges.
