Potatoburgers |
Here is one option for using a pound of ground beef. Potatoburgers 1 pound ground beef 1 cup chopped or coarsely grated raw potato 1/4 cup chopped or grated onion 3 tablespoons chopped green pepper 1 teaspoon salt 1 large egg 1 tablespoon canola oil 1 1/2 cups tomato juice or puree 1 rounded tablespoon flour Mix all ingredients except oil, tomato juice and flour. Form into 5 or 6 flat cakes. Brown the cakes on both sides in oil in a frying pan. Add tomato juice, cover, and simmer slowly until done, about 25 minutes. Remove cakes and keep them hot. Mix flour with a little water and stir slowly into the liquid in the pan. Cook until thickened, stirring occasionally. Serve this sauce with the cakes. Judy Trumble, |
