Quick Beef Stew
Preparation and cooking time: About 30 minutes

1 pound cooked beef, cut up (about 2 to 2 1/2 cups, cut up)

4 medium carrots, cut into 2 1/2-inch strips

3 medium potatoes, pared and cut into 1 1/2-inch pieces

1 cup sliced celery

1 envelope dry onion soup mix

3 tablespoons unbleached flour

2 1/4 cups water

Combine all ingredients in a 2.5-quart microwave-safe casserole dish. Cover and microwave on high until mixture is boiling, about 10 to 12 minutes; stir. Cover and let stand about 5 minutes. Then microwave another 10 to 12 minutes, until vegetables are tender; stirring every 5 minutes.
