Join Simply Cookin' Chef Mitzi Stinson as she makes Gingery Pork with Peaches.

This indoor grilling recipe brings big flavor to your dinner table, yet only requires one pan and about 20 minutes. It can also be done easily on your outdoor grill if the season is right.

Grill onions and peaches alongside the pork for quick and healthy side dishes. Not in the mood for pork? Substitute salmon for an upscale version of this 20-minute dinner.

1T rice vinegar

1T grated fresh ginger

1 tsp. fresh thyme leaves

4T extra virgin olive oil, divided

Kosher salt and pepper

4 pork chops (about 1 1/2 lbs.)

2 medium red onions, cut into wedges

3 peaches, cut into wedges

 

Heat grill to medium-high.

In a small bowl, combine the vinegar, ginger thyme, 3T of the oil, 1/4 tsp. salt, and 1/4 tsp. pepper; set aside.

Season the pork with 1/2 tsp. salt and 1/4 tsp. pepper.

In a large bowl, gently toss the onions, peaches, the remaining 1T of oil, 1/2 tsp. salt, and 1/4 tsp. pepper.

Grill the pork and the onions, until the pork is cooked throughout and the onions are tender, 5 to 6 minutes per side.

After flipping the pork, place the peaches on the grill and cook until tender, 3 to 4 minutes per side.

Drizzle the pork with the vinaigrette and serve with the onions and peaches.
