With the 4th of July approaching, how have your neighbors behaved with their use of fireworks?
No problem. They keep the fireworks to mostly daytime hours and are usually done by about 10 p.m.
We have occasional booms after 11 p.m., but it hasn’t been too bad.
Holy bottle rockets! It sounds like a war zone around here far too late into the night and the mess on the streets is worse by the day.

Simply Cookin' chef Mitzi Stinson shows you how to make a refreshing Farfalle with Turkey Sausage, Peas and Mushrooms pasta dish.

This health-conscious meal is a savory way to add vegetables to your family's diet. Kids will be drawn to this dish for the pasta and cheese, while adults will love the combined flavor of the turkey sausage and cremini mushrooms.

Add some fresh bakery bread, and you'll have a home-cooked Italian feast on the table with little effort any night of the week.

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 4 servings

1/2 cup extra virgin olive oil

1 lb. ground turkey sausage, removed from casing (or frozen Louis Rich Tube, defrosted)

Salt and freshly ground black pepper

10 oz. cremini mushrooms, coarsely chopped (or baby bella mushrooms)

1 (10 oz.) package frozen peas, defrosted slightly

1 lb. dried farfalle pasta

1/2 cup freshly grated Parmigiano-Reggiano cheese

 

In a large pot, bring 6 quarts of salted water to a boil.

In a large saute pan over highi heat, add 2T olive oil.

Season turkey with salt and pepper.

Add turkey and saute, breaking any large lumps until golden brown.

Remove meat from pan and set aside.

Add 2T olive oil to pan and heat.

Add chopped mushrooms and season with salt and pepper.

Saute until all the liquid from the mushrooms has evaporated, about 5 minutes.

Add the peas and saute for 4 minutes.

Return the meat to the pan and cook for another 3 minutes.

Remove from heat and set aside.

When the pot of water has come to a boil, add pasta and cook until al dente, about 8 minutes.

Drain in a colander.

Return pasta to the pot and add the meat mixture.

Combine thoroughly and gently cook over medium heat for 5 minutes.

Drizzle in remaining olive oil.

If the mixture is dry, do not hesitate to use more olive oil if necessary.

Check the seasoning.

Turn off the heat and add the grated cheese.

Stir well and serve in large bowl.
