Join Simply Cookin' Chef Mitzi Stinson in making easy Chicken Lasagna Roll-Ups any night of the week.

This recipe mimics traditional lasagna dishes without the lengthy preparation. You get spend less time in the kitchen and more time with family and friends.

The individual portions makes serving easy either around a table or as a party dish. Serve with a simple green salad and garlic bread for a complete meal.

Prep Time: 10 minutes

Cook Time: 30 minutes

6 lasagna noodles, uncooked

1 pkg. precooked, cubed chicken breast (from the freezer section; Mitzi uses Tyson brand)

1 cup Ricotta cheese

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

1 tsp. Italian seasoning

2 cups spaghetti sauce

1 cup part-skim Mozzarella cheese

 

Preheat oven to 375º.

Cook noodles as directed on the package.

When cooked, rinse the noodles with cold water and drain well.

Mix Ricotta cheese, chicken, Parmesan cheese, egg and seasoning.

Spread 1/3 cup of the chicken mixture onto each noodle.

Roll up tightly; place each seam-side down, in 9-inch square baking dish.

Pour spaghetti sauce over roll-ups; sprinkle with Mozzarella cheese.

Bake 30 minutes or until heated through.

Great Substitute:
Substitute cottage cheese for the ricotta cheese.
